Abstract
  • Using UV−vis spectrophotometry we have established that a process ofcopigmentation takes placebetween an anthocyan molecule, malvin chloride (malvidin3,5-diglucoside), and a nonglycosidizedpentahydroxyflavone, quercetin (3,5,7,3‘,4‘-pentahydroxyflavone).The kinetic and thermodynamicparameters, by which the process is characterized, were correlated tothe structure, i.e., the natureand position of the substituents in the interactingmolecules.
