Abstract
  • A Trichoderma longibrachiatum transformant has beenconstructed constitutively expressing thehomologous egl1 gene under the control of theAspergillus nidulans glyceraldehyde phosphatedehydrogenase gene (gpdA) promoter. Consequently, theegl1 gene can be expressed in glucose-containing media. The egl1 product (EGL1) has beenpurified from such a medium. Thephysicochemical and kinetic properties of EGL1, which has bothendoglucanase and xylanaseactivities, have been determined. Analysis of the effects ofcertain enological factors such astemperature, pH, and glucose, ethanol, and SO2concentrations on the enzyme's activities indicatesthat it can be used in wine production.
